Full Dish: Tanjore in Fishkill
Traditional Indian food is the stuff of slow-cooked comfort. At Tanjore restaurant in Fishkill, the currys and other Indian sauces are complex and original concoctions that may sometimes be hot, but are always spicy.
Chef and partner Kamarat explains that there are four levels of heat used in Tanjore's cooking. Those seeking on the milder side should try Tanjore's biryani dish, which combines rice, vegetables, subtle spices and a choice of lamb, chicken or shrimp. Another popular dish is Tandoori chicken (pictured), topped with sliced onions, cabbage and bell peppers.
Tanjore also offers a host of options for vegetarians that are so hearty and flavorful that carnivores would never miss a beat. Then again, there's always the restaurant's seasoned meat platter, featuring an assortment of steaming kabobs or lamb pasanda cooked in a creamy cashew and almond sauce with saffron and cardamom.
