The first word that comes to mind at the mention of Chiboust is "passion." This is a place that makes its own gravlax, jams and ice cream. In fact, nearly everything is made in-house, because the staff loves to make it, and believe they make it better that way. With the help of head chef Vijay Raghavan, and a close-knit staff, proprietor Jill Rose has quietly created something extraordinary at her small restaurant in Tarrytown.
